I'm trying to catalog our Atlassian entitlements and I'm unclear if the SEN number is a generic identifier of a specific product (i.e. a SKU / model number), or if it is specific to a single deployment by a single user. I'm thinking it is the latter...if so, how do I obtain the SKU/model number for each of the products that we have deployed?
SEN is your "support entitlement number" - it's unique to your licence.
Jira does not have SKUs in the usual sense, much like almost all software. It has a deployment type - Cloud, or Server/Data-Centre (with a version)

From the installation. The licence is not locked to a version - a server or data-centre licence is valid for all versions released before the end of the licence. (Well, ok, if you go back far enough, like to Jira 3, you have to get different format of key, but it's still a valid licence).
The licences you've got there entitle you to use the very latest version of Jira Software and Confluence, Data Centre editions, and that statement will remain true for any new releases before 20 March next year.
