I would like to add a progress bar at the header of a resquest view in Jira Service Desk

The business has asked to display a progress bar to show all the stages of the workflow and highlighting which stage the request is in.

i don't know of any progress bar method. keep in mind that unless the workflow is relatively simple this could become messy. You can certainly show the status of all issues and sort the list by status. you could consider say a pie chart by status or you could look at the 2D gadget by maybe assignee (Y) and status (X).
