I can't find in custom fields the field "Type of document" that is available in the portal and with options. Also it's not possible to remove... It's very confusing
You'll want to check two places:
1. The screen use for the issue type has that field.
2. Check field configuration if it is a required field. This is probably why you can't remove it.
If you go to your project configuration field and search that field, click on optional. Then go back to your request form and make it optional a well. This should allow you to add and remove it as you need.

Adding to what @Benjamin says, click on the name of your field type of document in the view you captured in your screenshot. In that screen, it is possible to add an alias to the actual custom field in Jira. By editing it, you may very well find out that the custom field is known in Jira under a different name. That may help you locate the actual feld.

In addition to what @Walter Buggenhout and @Benjamin wrote have the Instance administrator confirm that the field is configured to your project. If you are project admin it will appear on your field list. Sometimes a field is on a screen and it can be added but if it is not on your project's field roster it will not function although it appears on create/edit/view screens.

@Carla Ann Rowland would the project admin vs instance admin explain why a project admin cannot see the Search fields field on the right hand side, but an instance admin can see it?
