How do I update the selection options on an existing ticket option?

There are six distinct ticket options for requesting service or support from me and my team and it has been quite a while since I first set up the fields and selection options in the fields associated with those tickets. I'm ready to go back in now to expand and refine the ticket fields with additional options but cannot figure out how to do that.  

Any assistance and feedback is much appreciated.
