I'm trying the demo Service Desk and set up it up for the extensive IT type. I actually need to use the Basic service desk but can't figure out where to make that change.

If you created a project based on one Service Desk Type, you can not switch to another one. Actually you should not. Types of projects just create for you predefined issue types and workflows. You can always change them for your needs.
What kind of options do you mean?

You should change the options you do not want through Jira Service Desk interface. What exactly do you want to change?

@Alexey Matveev I'm not referring to the project, I'm referring to the service desk setup itself. We have a smaller IT team and the option I selected is not what I needed.
