Are you saying you wish to rename the To Do status to Triage. If so you don’t do that exactly. You can creat a Triage Status and then modify you current workflow for the project in question to use Triage instead of ToDo. On the other hand if you want to change the “To Do” button in your screenshot to “Triage” then simple edit the workflow and find the transition labeled To Do (not the status box) edit and change the name.
