Hi all, I'm noticing that when some clients reply through email and their signatures have HTML in them, it gets stripped. Is this by design or did I miss a setting somewhere?
It's not a huge deal, but it would be nice to see the signatures correctly.

Here is what the signature looks like in the Service Desk and the second image is what it looks like in emails. Seems the HTML/CSS gets stripped somehow?

There is an option called Strip quotes, but it's to remove the history of the email.
This option can be found in Jira settings > Products > Email requests.
Currently, Jira doesn't remove email signatures from incoming emails. There are feature requests suggesting improvements for that:

I'm not sure any of those requests touch on what I'm asking? Maybe the third one, but that's specific to HTML tables. I was asking about proper formatting of the signatures. Should I open a feature request?

Currently, there is no feature suggesting to correctly format an email signature. Most of the features suggest removing signatures.
Feel free to raise a new feature on jira.atlassian.com (project JSDCLOUD) adding more details about why the feature is important for your environment.

When using a Classic project, it's possible to change the renderer of the Description field and it may cause issues with signatures.
If you are indeed using a classic one, please go to Project settings > Fields > > Find the field Description > Click on Renderer and select the Wiki Style Renderer > Update.
If it's a next-gen project, would you mind sharing a screenshot? Just make sure to hide private information.
