I am trying to export the list of our projects in Win Jira. In the "View All projects" section is there a way to export a projects listing in to excel? Please advise.

There is not a native function to export the list.
You could simply copy all the text in the table/list of projects and paste it into Excel.
There are also several third party apps available in the Atlassian Marketplace that would provide that functionality.
