Welcome to the community. Out of the box, you cannot add white space (i.e. additional line breaks) between fields. You can control the layout if you include FORM into your Request Type screen design if needed.
The question is why you want to implement more white spaces between fields? Please advise

Unfortunately, it is nothing one can change the layout unless with third party add-on.
However, FORMS (previously named Proforma) for Data Center is still a paid add-on which you can get it from Marketplace - https://marketplace.atlassian.com/apps/1215833/proforma-forms-checklist-for-jira?hosting=datacenter&tab=overview
The same add-on is no longer a paid add-on from Atlassian Cloud env.

@Emily Bischoff this is a bit of an ugly hack but if you are working with what you got then it might work.
In the Request Type form, you can add \\ to the description of each custom field and this acts as a paragraph break.

I don't see an option in our instance for forms. Is it available on Data Center? We are running Jira 9.15.1.

If you use Forms, to build request types, you should be able to achieve your requirements.
