On the test project on my organisation's site I've set up a test security scheme, with the levels just being "Level 1", "Level 2", "Level 3". I've applied this scheme on the project, but I can't seem to set the security levels on any issues, I can't see the button for it anywhere.
I've made sure I have the appropriate permissions, I'm an administrator in the project and in the jira-administrator group.
Any help with this would be appreciated.

Jira Service Desk has switch recently to the new issue view, and the issue security doesn't show as a field like the other options but shows as a lock on the top right of the ticket.
I'm not sure if you are using the new or old issue view. If you are using the old one, it should appear if the field is filled.
If it's not showing on the old view, please try to bulk edit and add select the security level to see if it will show the field after that.
If it's the new issue view it shows like this:

When the field Security Level is empty, it won’t show on the view screen. In order to edit this field, you can click on “Edit” or use the shortcut pressing GG or Dot in order to open the dialog box and you can search and set the value in the field.
