Add drop down value to field

I am trying to add additional company names to the Organization fields (there are two acceptable values there already, need to add a few more).

All the documentation online seems to be for Jira Server, and when I follow those directions, it says it is locked.

Hi Andy and welcome to Atlassian Community!

The field "Organization" that is locked is because it's a system field created for Jira Service Desk.
To create more organizations you must go to the Service Desk Project and click on Customers > Add organizations.
