In the new editor, how can I create a link to a new page on the fly, as I use to do (a lot) in the old editor?

In other works, I want to be able to do the following in the new editor:
In the old editor: I just write '[' and start writing the name. If it is a new name, I can intermediately select "Insert link to create page"

as far as I understand you are talking about the "Link to placeholder (undefined page)" feature? As you can see on the Confluence Cloud Editor Roadmap this is not yet implemented in the new editor, but is in the short term backlog and will probably be available soon:
And here is the issue where you can track this feature and/or vote for it. In this context it might also make sense to read this Community Article. :)
