To know why your Confluence instance is freezing, you'll need to have a look at your Confluence Server Logs. You'll also want to consider if it happens more on specific pages, spaces, or for specific users. When you notice the issue occurs, go back and check your Server Logs, and you'll be able to see the issues that were occurring.
Lastly, you can also try to use your Developer Tools console in your browser to see if a particular request is taking a long time.
