In the old editor experience, I relied heavily on the mark up functionality to create nested tables.
Where can I find this functionality in the new editor experience in Confluence?

Thanks for reaching out in regards to using wiki markup within the Confluence Cloud editor. Currently, on the roadmap there are no plans to have this feature of the old editor added into the new editor. Further information on the roadmap may be found at Confluence Cloud Editor Roadmap. Additionally, there is an outstanding feature request for this which may be found at CONFCLOUD-65756.
An alternative to using the web UI to use wiki markup would be to use the REST API to create pages using wiki markup. Further information on this may be found at Confluence Cloud | REST API examples.
