Is it possible to timeout or expire the cookies or SAML/SSO data in the browser ?

Who is in charge in and how is the SAML/SSO setup in Confluence related to your IDP.

i did not see the session times parameter in the authentication methods.

Depends who manages your IDP, if this is done from AD or Azure AD, you would need to the users managing it.
Where is you authentication directory and how is this managed.
But sill if an a browser the same IDP SSO/SAML is used for other application and that is singed in in other browser accessible applications use this session automatically.

Clear out all browser history and cookies as it seems there is SAML/SSO data in the browser of the laptop or the device used.
