I'm new to the Atlassian world and I apologize if it's a dummy question.
in Jira Clouds, I need to send an email daily (if needed) to each user inside a specific project that contains the list of open issue the user has as assigned.
there's a way to do that?

There is an Automation feature for the Project . You can schedule such an email using automation features based on some triggers and schedules.

Browse over to your project , project settings - you will see an option : Automation , there you can set you rules based on your requirements :)

I honestly think that an automation rule may be over-complication for this use case.
Subscriptions to saved filters have been developed for this in the earliest Jira versions. Make sure to check these out before deciding for one or the other feature.
