How do I delete users to make room for two new team members. We'll organise a licence to increase users in the coming weeks but just for a quick turnaround.
Also, because there is a limit on user is this way, they can't view our pages.

Deleting a user should be avoided for many reasons. In most of the cases when you delete an user the places, where it was added (e.g. creator of a page) it will appear just as "Deleted user". When you have several deleted users it would be quite difficult for you to track who is the exact deleted user. Instead of deleting you can consider disabling the user, which will also help you save from licenses. You can check this article and see the differences.
On your other topic, in Confluence there's a possibility to expose the whole space to be visible for users without an account, which will eventually save you some more licenses. You can check how to do this here.

Under Settings / User Management, you can suspend users who are not using the system.
