I just started a blog entry on Confluence Cloud and for some reason, it doesn't show up, when I click the blog menu on the left side. I didn't do anything with the space or blog post settings. Any ideas what I could check?

As I understand, your blog posts do not show up in the Blog posts section of your space. If you are a Site Administrator, you should have access to the blog posts.
I tried to replicate the described behavior locally. I was able to temporarily emulate it. However, I believe it was connected to my own browser cache. Here is what I get:
We can start by trying to Clear your browser cache and then checking the blog post section again. Here is some documentation on how to clear the cache of a few browsers:
I would like to ask a few questions so I can better understand this situation. Here we go:
- Is the behavior present in any other Space where you are able to publish blog posts?
- Is any other user able to see the blog posts in the affected Space?
- Has the feature worked at some point in the past?
- Was there any kind of change applied to the affected Space prior to this behavior?

thanks for coming back to this. I tried today, and my two blog posts were now available. I then tried a new blog post, and it did NOT show. That means, caching could be part of the problem. However, I then tried to delete the cache in my firefox, and the new post still didn't show up.
About your questions:
1. I didn't use any other space yet, but will try.
2. There are also no other users involved. I use this space to organize myself at home with private projects
3. No, I didn't try blogs before, so those were my first 2 posts.
4. Not that I know of. However, I just today changed to the new navigation (and back). The posts showed up in both. The new post didn't show after creating it, but it came up after switching the navigation style again. So it might either be the switch that refreshes that list, or it is something that happens after some time.

When you said "I use this space to organize myself at home with private projects" our Personal Space came to mind.
I tried to replicate the behavior on my Personal Space to see if it would yield different results. However, the outcome was the same I shared earlier.
Right after I published the blog, it was not present in the sidebar:
However, right after I reloaded the page (F5, CMD+R or press the reload button in the User Interface), the blog post was present:
With these results, I would still love to see what comes out when:
- You try to publish a blog post into another space
- When any other user tries to publish a blog post
