I'm trying to set up a task list in JIRA and link it to 'Tasks' in JIRA. I can't seem to link them at present. Is this possible and how should it be done if so?

As I understand, you need to link Jira Issues of the Task type to a Task List in Confluence.
Currently, there is no way to connect Confluence tasks with Jira Issues of the task type. The only thing we can do is visually link them in Confluence by manually adding the Jira Issues to each task entry in your list.
This is what this looks like:
To be perfectly clear, if you check the checkbox to finish the task nothing will happen with the issue in Jira. The same can be applied if you complete a Issue in jira, the task in Confluence will not be completed.
What you can do to dynamically display a list of Jira Issues of the task type in Confluence is use the Jira Issues macro and filter by issueType=Task. Keep in mind that you will only be able to apply changes to the issues directly via Jira.
