I'm trying to use # to create line numbers in a how-to document, but the numbers reset to 1 when I have quoted text after a line. How can I stop them from resetting to 1?
I assume you are talking about ordered/numbered lists? When you want to have content on a new line, but not increment the number, use a soft return (shift+Enter).
Yes, numbered lists. The problem is that I enter lines starting with # and I get 1, 2, 3, etc... but then I add quoted text after a line, and the next line starts with 1 again. I need it to continue numbering in sequence and not start over at 1.

Yes, when you get to the end of the line, use SHIFT+ENTER, and your quoted text, then ENTER, followed your next item. For example
