I am trying to set up an editorial calendar in confluence and am wondering if I can have a date field on an issue card in a project populate that calendar. Any suggestions?

Hi @Bobbi Jo Shortt - in short, yes you can display dates on Jira issues in a Confluence calendar if the two products are integrated.
The steps to follow are here. Once set up you can also drag-and-drop the event or update its date form Confluence, and it will automatically update in your Jira application.
