I'd like to create a list of all of the spaces that exist within my Confluence account and have the list include the name of the person that created the space. Is this possible to do?
You can do this by using the REST API, the get space endpoint returns the history of the space which includes who created it.
Is this the only way to produce this list of all of my spaces with their owner? I'm not familiar with how to use any of the APIs in Confluence.

Yes, unless you manually go into each space in the UI and under Space settings > Space details to find out who created the space.
