I want to be able to add some of the custom fields from a Jira story to a confluence page to give a snapshot of where they are without people having to go in to all the individual Jira tickets. So something like this https://confluence.atlassian.com/doc/jira-issues-macro-139380.html but not from issues.

in order to do that you need to use jira-issues-macro and select columns. If you use a specific jira issue link you can select embed to have a full overview of that issue in a confluence page
