does anyone know an App that can give us a list that counts the users that have access to a space?
It would also be ok if we get the list of users and can than count them via Excel.

User Macro for Confluence Cloud can provide you with exact solution for your request. We have created Usercount for every space macro for you.
It will show you exact number of unique users that have access to each space (it also includes groups members).
This data will be shown in a sortable table. Each row will have link on space key to each space permission settings page for quick settings.

Sorry, @Patrick Alexander, but I don't have Premium, so I can't try out this feature. I was simply pointing you to where you could find out about this feature that @Nikola Perisic mentioned.
Since others are recommending 3rd-party apps, I fear that you may not be able to find what you need with this native feature.
