How can I see a shortcut to "spaces" in sidebar by default? Home page is not reflecting this shortcut and could not figure out how I can have it available to all space admins

In the Site Sidebar, Spaces should be there already. Are you referring to individual Space Sidebars?
If you want to add it to an individual Space Sidebar, you could edit the sidebar (hover over the bottom right corner and click the pencil icon) and add a space shortcut that goes to your spaces URL:
