For the Elements > Jira Issues. Is it possible to sort the columns so I can see the last completed tickets first?

Hi @Alexander Grover and welcome to the community!
As far as I know, sorting Jira issue in Confluence is not possible (https://jira.atlassian.com/browse/CONFCLOUD-43518)
Perhaps, you could try pulling issues from JQL and sort issues using ORDERBY query
