New markdown document seems inaccurate

I am having issues with this new markdown changes.  I used to be able to switch to heading 3 by typing h3., but that does not work any more.  The documentation here says to put ### around the text, but it does not seem to work.  I tried ###<text>###, ###<text> and it was not changing to h3.  After several trials, I accidentally put a space after the first ###, (i.e. ### <text>) it switched to h3.  I think it would be good to add that minor but important details in the "where to place markdown" column.

Also, I cannot seem the markdown for strikethrough to work by adding --around the text.  I'd appreciate any tips on new markdowns...

I guess the strikethrough is "~~" not "--"
