Your status doesn't change from Epic to Story, because those are issue types, not statuses.

Do you want the status of your Epic to 'Done' when all Stories in your epic are done?

Could you explain more in detail what you're trying to achieve, if possible with screenshots?

Do you mean when you move an issue from issue type Epic to issue type Story, you would like to change the value of a custom field?

Yes, that is possible via Automation.
