To restrict the user by selecting few options under Custom field

Our releases field contains set of values. Now I want to restrict the user from selecting the "Completed" releases. Expectation is, users should not create any issue with completed releases. How shall we restrict/disable the values/options under custom field

If you were using the native Versions (aka Releases), then you just need to archive a version for it to be hidden from the selectable values of the fixVersion field.

You would need an app to do that, like Behaviours - Scriptrunner or Power Scripts. Both of these can control what is visible in a field.
