We recently decided that to meet our internal needs we would need to build our own Jira sever instance and use it for production. We started with a trial on the Jira cloud and created a few projects that we would like to keep. The question is there an easy way to migrate just the project data from the cloud to our new server instance. There is only a limited amount of data in the cloud so we could just recreate it but if we can easily move it that would be better.
I have found a few articles on the subject but they all appear to require using project backup and restore. Plus require matching versions and possibly configurations of the cloud instance and the server instance. Too much work for only a little data. Any ideas or are we stuck recreating the data?

Is this the documentation you've located? You are correct in that transferring a project from Cloud to Server will require a backup and restore. If your project is small, it may be easier to recreate it.
