I'm the admin for my organisation, and my account is listed as a Managed Account. My question is how can I change the email address of my account ?

I performed an analysis on our logs and confirmed that your email had a block on the server that prevented emails from being sent to your address. This can occur when the system tries to send an email and the account does not exist yet, it's not activated, or it rejects the email for some internal reason.
So, I removed the block from your email. Could you please test it again and confirm if you receive the Atlassian verification email now?

Does your company already use Atlassian? If so, they may need to add you. If not, the email may be being stopped by your company spam filter.
