What do we do if we only have the one person assigned the Org & Site Admin role and they have left the company? No one else has this role to be able to see the settings in the screenshot steps provided above.
Do we open a ticket with Atlassian?

Checking the details of your site, I can see that you are a site administrator of a Standard site and also the billing contact.
With this said, if you can't access Jira using the credentials of the previous Org admin, please, create a ticket with our support on support.atlassian.com/contact so our support team can add you and another teammate as Org administrators.
Here in community, we don’t have access to your site, so a support ticket is necessary for that.
