I only see a option to restrict permissions. Is there a way to allow some users to do specific tasks?
Once I restrict for all spaces, is there a way to allow some spaces?

Jessie from Adaptavist here. We're actually working on this feature at the moment and it will be released to ScriptRunner for Confluence Server/DC in early 2022.
The update will allow you to get a lot more granular with space admin permissions on built-in scripts, including allowing certain space admin access to certain scripts or certain spaces to have access to certain scripts and not others.
I will provide an update once we have released this feature. Won't be long now!

This space admin built-in script permissions settings update is now live in version 6.45 on Server/Data Centre. It allows you to restrict or allow access to space admin built-in scripts on an individual script level and for users, groups or spaces. For more information see our blog post.

I don't think so.
If you want to enable space admins on just 1 space, you have to leave the "All" box unchecked, then add all of the space where you want to restrict pemissions.
Remember that SPACE ADMIN permission is required on a given space before this feature will be accessible. Generally, space admins have permissions on all features of the space including the ability to delete that space. So using those scriptrunner built-in scripts should not provide too much additional risk.
