Is there any way I can recover a deleted activity in a card?

Only if you had taken some form of backup of the card or board

If you're on Premium, there's a CSV export you can run, a couple of people I know have said https://rewind.io/backup/trello/ is worth a look, and you could base your own backup on https://github.com/mattab/trello-backup. I'm sure there are more options, including probably dedicated power-ups.
