Project number

I might be blind, but I can't find any information about what I'm looking for!

I would like to use Trello as a tool for our projects, but for that I need an automated function that creates project numbers every time I start a new card.

Does this function exist?

Trello does not have a project number in the way you have described. Each card has a unique card id {cardid} and if a card represents a project you can use that as the project id. You can find it as part of the card url.
