My business partner/wife wiped out a complex detailed Trello board by reconfiguring it to her liking. Is there any way we can get the old board back?

This is exactly why I tell Trello users to subscribe to Rewind backups for trello 

It's not gonna help you get back what you had but it protect from future issues

There isn't I'm afraid - once a board is modified it's not reversible without setting it back to how it was manually.
