I haven’t worked at my former company for several months. How do I cancel a subscription that is still linked to my credit card?

Does your former employee have any interest in the information in your Trello board? In that case you should contact them and have them take over the board and change the billing information.
If the board does not contain any valid information and you can't access the board to remove your billing information I would suggest that you contact Atlassian support and ask them to remove the billing information.
