There is a big need to be able to expand and collapse the checklists. With the ability to add multiple lists, it can quickly turn into a long scroll to get through them all. With a long list, it becomes very hard to get a clear overview of the tasks that are within the given task.
The feature to expand/collapse is just the beginning to create a better and clearer overview of tasks within a task - it could need more, like assign an item to a team member and a form of labelling for prioritising instead of relying on which item is on top of the list.
Also, if all tasks are checked off, it would be nice if the list collapses on it's own or you can set it as a rule to automate it.

You can already assign a team member to each item in a Trello checklist. For prioritizing, a simple and effective way is to use emojis at the start of the item text. For example:
🔴 High Priority
🟡 Medium Priority
🟢 Normal Priority

As this is a question for the free plan, the option to assign to a team member is not available, since it's part of the paid plan. My mistake to not notice that.
As for the prioritisation with emojis, it's a clever idea, but it would require to have the emojis saved somewhere for easy copying. So not really a very user friendly option.

If you are using Windows, you can easily access emojis with the Win + V shortcut. For macOS, the shortcut is Command + Control + Space. This way, you don't need to save or copy them from anywhere.

Unfortunately I'd rather not have the need to get plugins to the browser for a fix only related to Trello.

Agreed but I doubt it is even on their priority list, let alone very high. They could potentially have greater capacity to roll out features and improvements if more people actually paid for it 😉
