The email I am using at my place of work, is the same at a previous employee's email. He signed up for everything under the sun with this email, and my handle / username is @mattharrison1. My name is Mark and I cannot find a way to change it! I have changed my 'public name' but it still shows up.

The issue is that Trello has two separate fields — public name and username (the @handle) — and they are changed in different places.
You already changed the public name, but to change the @handle you need to go here: https://trello.com/u/me
Find the Username field and update it there.
