I'm using the OSX version. Is this possible by backing up ~/Library/Application Support/SourceTree, or am I missing other files/folders?

Sure thing, it's called "browser.plist" in the folder you've mentioned. You can just back it up and restore it if needs be, although if the repositories are missing SourceTree will just note that they aren't available anymore.
