Part of my customer support system is a ticketing portal that generates emails when a ticket is created, can Ops Genie take those emails in and alert on them based on criteria we define?

Yes, you can use emails to generate alerts, if you go to Integrations there is one for Email. Have a look at this KB for more information on how to set it up, it easy to do, all you have to do is give it a name and associate it with a team and then Opsgenie will generate the email address for you.
