I would like to know the best solution for my company. We would like to have our own Jira, but we are also using two separate Jiras. One is cloud and one is on premises from different company’s.
I would like to have a project in my own Jira and tasks in all three jiras. From that point on we would like to know in which point the project is - from one jira.

I will Make a Jira on Azure ( https://azuremarketplace.microsoft.com/en-us/marketplace/apps/atlassian.jira-data-center?tab=PlansAndPrice ) and than I will combine the 2 outsorce Jira from my suport companys .
And in the end hope everything works :D

Or you can take a look at WatchTower that allows you to consolidate issues from multiple Jiras into one agile board without actually synchronizing instances

This sounds like you might want to synchronise between copied projects in each Jira. I'd recommend a look at Backbone and Exalate in the marketplace.
