We work with several projects in Jira at the same time. I have tasks from three projects on my board. Can I create a release to which I will add the necessary tasks if they belong to different projects?
If this is not possible, advise, please, an alternative option for sorting tasks (except for using labels with a release date, because this is not convenient).

As you see from the above ... there are few options. I would also suggest to try out Release Management & Delivery Roadmaps App that allows to combine multiple releases into a cross-project package and track accordingly. If you need to simulate a single version across multiple projects you might wanna also check a "Versions Sync" feature of the App that is built for that.

I believe there's a few different approaches and my answer will certainly be limited to what I have used in the past. Still, I believe the two major ways you can go is to either upgrade to Jira Software Premium or to get an app from the Marketplace.
1. Jira Software Premium
JSW Premium contains Advanced Roadmaps which allow you to do some cross-project planning. They are pretty well supported and can be quite nice to work with. If Premium makes sense for your team, this is a good option.
2. Swanly from the Marketplace
Swanly is a terrific app for cross-project release planning and release planning in general. We use it in our team. Also, the team at Jexo are all really nice and approachable should you ever get stuck. They even have an article for your use-case.
Finally, since you mentioned labels as being inconvenient to use, there is also the option of using a label management tool to make handling labels easier. In my biased opinion (it's our own app) Project Labels is the nicest option.

Taking into consideration your requirements, I believe that you may want to give some of the apps from the Atlassian marketplace a try - like BigPicture/BigGantt for example, developed by Softwareplant (A company I am also a part of). Those will help you organize your work better, manage your work across multiple Jira projects on one screen, and also use take advantage of other powerful features dedicated to project management:

May I ask if you are actually going to make a single release, or if you just want to use that to keep a feature organized over multiple projects?
