Is it possible to assign a default owner for the custom filed like Test Owner ?

I need to add a default owner to be assigned to the field Test Owner for a given project.

How can I do this ?

You can do that for specific projects and still use only 1 custom field with an additional plugin for Jira.

You can set a default value for user picker fields if that is what you are asking. If you want that default value only applied to a specific project, I would create a new custom field context that allows you to specify the default value for just the project you want.
