I am trying to enable scheduling in Jira Service Desk, like this post explains.

I'm having trouble with it. I did the permission helper and it shows that my user should have the permissions necessary, but I can't find/add the field on the ticket. I checked on both tasks and incidents.

You should add the Due Date field to the Edit and View screens for the issue type. You can find more info here:
