Thank you for the answer! However we self host JIRA and service desk, and I could not find settings > email channels.

Ah, sorry. There's a drop-down at the top of that page for selecting the version you are on. It defaults to Cloud, but https://confluence.atlassian.com/servicedeskserver031/receiving-requests-by-email-802164772.html if you choose service desk 3.1
