At Jira service desk we have set up a project for two years with different types of requests on the customer portal.
The project in the configuration has indicated NOT assign user by default, but for each type of request the system assigns a user.
Automation is not configured.
I don't remember where else you could configure this,
I will appreciate your help.

The easiest way is to put the Assignee on the Request Type form and make it hidden. This will require a default value where you can select a user who has Service Desk Team permission.
