Time Tracking in Zendesk - Change Categories

Hi, We have deployed Time Tracking into our Zendesk and love the application!
The only problem is that we need to be able to edit/add categories as per the below screenshot.
Can someone advise how this is achieved as I cannot find it anywhere on the KB. Many Thanks!
