Newbie question, I'm sure. Service Desk implementation. I cant find good examples for when should I create a single project for all my customers or a project for each customer.
In our case a single customer (an organization rather) will make service requests, report problems, track maintenance or changes. Or in most cases we will do it on behalf of the customer. We would create reports for this one customer / organization on a monthly basis.

Thanks Meg! Looks like both options could work for me. One project + tags and custom fields to distinguish multiple organizations when it comes to SLA / reports, etc.

What you'll really need to consider is whether or not one workflow will work for all requests being serviced in the single project desk. Glad this helped though and best of luck, the Community is always here if you have questions.
