Hi,
I would like to create a new issue type, in one project only on my Jira Service Desk, and link a new workflow to it. Unfortunately I can only see the existing Issue type in the project settings, and they already have their own workflow.
Is there a way to do it or maybe someone has a workaround?

Please, allow me to provide you some details so we can better know we are on the same page:
In Jira Classic Projects, Jira Issue types are global in your site can be applied to all projects, not only a single project. Better explaining, you must be a Site-admin to create a new issue type, as described in this documentation below:
Adding, editing, and deleting an issue type
The steps to properly create a new issue type are:
- Select the Jira icon (

, or
) > Jira settings > Issues.
- Click Issue types > Add issue type.
- Enter a name and description for your new issue type.
- Choose between a standard or sub-task issue type. Sub-tasks can be used for smaller pieces of work that are associated with a standard issue.
- Click Add.
Once you do it, you can link the newly created issue type to your project and select a workflow to be used by following the steps below:
- Navigate to your project > Project Settings > issue types > Actions > Edit Issue Types and add the issue types you want. It will be added with the current workflow you have in your project
- Go to your Project settings > Workflows > Click Add Workflow > Add existing workflow. Once you run the client to add a new workflow, it will prompt you to select which issue types will be applicable to it
Now, if you are using a Next-gen project, the issue types are configured in a simple per-project basis, with only one workflow available. To create new Issue types in Next-gen, just navigate to project Settings > Issue types > Add Issue type.
